Abstract
In the Fall of 2016, the innovation team for a major health insurance company asked an undergraduate Food Product Development class at Drexel University to take their course beyond the usual approach of textbook readings, exams, and a culminating applied formulation project, and use a food design approach to develop a real food alternative to oral nutrition supplements for a target market of seniors aged older than 80years. This case study details the process used to develop a series of potential market-driven solutions to a pervasive and growing problem among our oldest consumers of food.
