Advice Guy: Spreading secrets
Restaurant Business, Vol.112(11)

Abstract
Questions on spreading secrets are answered. Secret menu items are not printed on the menu but are known to staff and available upon request. These may be modifiers, such as In-N-Out Burger's Animal Style burger (a mustardcooked beef patty with lettuce, tomato, pickle, extra spread and grilled onions) or totally unlisted items such as Mark Vetri's nutella pizza at Osteria in Philadelphia. In terms of building buzz, your servers are your best tool to introduce the idea as a perk to a favorite or fun guest. While "dine-and-dash" is a cute name and a common industry term, calling it what it is -- theft -- may provide the best guidance on how to handle it. As more restaurants strive to provide healthy options, yes it is possible possible to mimic -- though not completely replicate -- the deliciousness of fried food through baking, or more accurately, convection roasting. With roasting as a substitute for frying, try to preserve the general principles: 1. Keep some fat. 2. Dehydrate quickly. 3. Maintain circulation. 4. Pick the right pan.
