Beth Leonberg, DHSc, joined the faculty at Drexel as an adjunct instructor in 2004 and as full-time faculty in 2006. Her background includes clinical practice, management and research. Leonberg was selected as a Fulbright Scholar to Uzbekistan in 2018. She spent five months teaching pediatric nutrition to medical students and healthcare professionals around the country. In addition to teaching, she is an author of the Academy of Nutrition and Dietetics’ Pocket Guide to Pediatric Nutrition Assessment, 3rd edition and two chapters in the popular textbook Nutrition through the Lifecycle. She has been director of the Didactic program in Dietetics since 2011 and successfully applied to found a demonstration program for the Accreditation Council of Nutrition and Dietetics’ Future Graduate education model. She was the founding Director of the Human Lactation Certificate program in 2013 and directed it until 2019.
Leonberg is a registered dietitian nutritionist (RDN) and is licensed to practice in the state of Pennsylvania. She is a board-certified specialist in Pediatric Nutrition (CSP) and a fellow of the Academy of Nutrition and Dietetics (FAND). Leonberg has taught a wide variety of nutrition courses and currently teaches: Nutrition in the Life Cycle, Professional Issues in Nutrition and Foods, Pediatric Nutrition, Maternal and Child Health Nutrition, Advanced Seminar in the Dietetics Profession, and the Profession of Dietetics.
